Oatmeal Muffins

1 1/4 cups buttermilk
1 cup quick-cooking oats
1 egg 1/4 cup cooking oil
1 cup sifted flour
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Combine buttermilk and rolled oats in a small bowl and let stand for a fewminutes.
Heat oven to 400 degrees F. and grease 12 large muffin cups.
Beategg in mixing bowl and stir in oil and rolled oats mixture.
Sift remainingingredients together into oats mixture and stir only enough to blend (battershould be lumpy).
Spoon into prepared muffin cups, filling about 2/3 full.Bake until lightly browned, about 20 minutes.
If you would like to haveorange flavor, you can replace 1/2 cup of buttermilk with orange juice and
add 1 tbs. grated orange rind to oats mixture.
