Very ripe banana muffins

3 to 4 ripe bananas
6 tbsp. melted shortening or vegetable oil
1\2 cup sugar1 tsp. salt1 egg, well beaten
1 tsp. vanilla extract1
1\2 cups all purpose flour
1 tsp. baking powder 1 tsp. baking soda
1\2 cup chopped walnuts (optional)

Mash bananas; you should have 1 cup.
Add shorteningsugar and salt and beat till well mixed.
Add egg and vanilla and beat again.
Sift flour, baking powder and baking sodaover banana mixture.
Stir in, then add nutswith a few strokes of the spatula only enough tomoisten.
Drop spoonfuls into 12 buttered muffin tins andbake in a 350 degree oven 15 to 25 minutes.
You can add chocolate chips or raisins if you like in themixture.
