Polish Specials

 Chlodnik
  Ingredients:
  2 bunches young red beets with tops, sliced
  2 cups water
  1 tbls. lemon juice
  4 cups buttermilk
  2/3 cup sour cream
  1/2 cup juice from beets
  1/2 tbls. sugar
  Salt to taste
  1 large cucumber, peeled, thinly sliced
  2 hard-boiled eggs, sliced
  1 tbls. dill leaves
  2 tbls. chopped green onion
        
  Method:
  Cook the beets with the beet tops in water with lemon for
  20 mins. Cool thoroughly.
  Add buttermilk mixed with sour cream and beet juice. Season
  with sugar and salt. 
  Add cucumber, eggs, dill, and green onions.
  Serve very cold.
  Excellent on a hot summer day.
  Serves 10.
